You don't basically my story is an American dream come true both my parents are native American -- Diaz a chalk -- Indian from either -- Oklahoma and my -- from the look -- -- -- way up in the northwest corner of Wisconsin.
And -- people often -- -- say Dave how southern kid ever meet some Galileo the north.
While the story is both my parents were taken from their families by the Bureau of Indian Affairs in -- and Indian boarding schools basically.
Making my parents orphans and so they were.
They met at Haskell institute for Indians in Lawrence Kansas they moved to Chicago.
Fortunately for me they found love got married and I do have being from the south he stole all my mom down south every other -- can -- she learned how to cook southern.
So that's where the passion for southern foods and barbecue came from so when did you spring into action when did you first start cooking.
You know I started cooking and this is really interesting because I'm often asked -- date.
Where did you learn to cook what will work what restaurant did you work yeah.
It and my story is basically and -- -- -- learn how to cook from my mom.

And so I learned all about how feeding a whole lot of hungry people that would come -- stand which was nothing more.

You know when you're cooking for our tourist were -- a -- -- -- There's a lot of people are coming at all times so you are you really got to be on the top your game.
You gotta be able to make the food you gotta be able to cook the food and got to serve it all with -- got to talk.

Really I grew -- -- bashful kid grew up never thinking that I could succeed but I happen to have a good friend of Harvey.

When I was nineteen and he got me aside he said Dave.
He said you were born to win you have the seeds of greatness and it doesn't matter where you come from doesn't matter what you've been through the only thing that matters in this great country if you have a dream and you're willing to work hard anything is possible.
And and you believe that because -- did have a dream and you're willing to work hard and you were experiencing to a degree success.
So you with that stand.
And then you decide I -- get bigger I could do more.
It's really Brian that the story is amazing because -- Stress struck.
Wasn't a little town Hayward Wisconsin went up in the northwest corner on the 18100 people in town and what I was building my first restaurant people would drive by and they would say.
-- what are you don't -- And I would Tom I'm building the world's best rib joint and -- -- look at me and they would say are you crazy.
And Hayward Wisconsin there's nothing but Swedes and Norwegians -- they don't have a cloak about barbecue why don't you go to on the Memphis or Kansas City but I have a dream and I told them hey I'm gonna build the world's best -- -- I'm gonna have the best sauce in America I'm gonna have the best corn -- the best honey butter -- own corn -- that the homemade creamy coleslaw on the -- -- -- Texas beef -- I'm gonna be the best.
And by the end of that summer.
The first year we are open.
We were serving almost 5000 people week without any advertising in a town of only 18100 people should register that the pure hard work -- -- putting together a great product -- about the product this sauces.
The -- putting together the way you cooking -- was attracting these people it.
Bryant nothing ever happens overnight to you know a lot of people they want get rich quick scheme I spent 25 years working on my recipes.
Traveled the country learned from some of the -- best that masters in America.
Taking a lot of notes and I must have made millions and millions of gallons of sauce.
I must -- burned up soft money racks of ribs in the pursuit of discovering how to make the world's best ribs.
And when we started out aren't really.
It Bryant I'm gonna share something with -- you probably have never heard look at work and really it's one of my -- stood -- of our success.
A lot of people we'll tell you.
You have to turn your dreams into goals -- got to write down your -- so when you do that -- term in two goals.
You probably never heard anybody tell you that you should put together your best of the best list and I I kind of I know where that came from it when I was growing up in and I often would eat at restaurants often -- now -- like.
The Italian beef sandwich I had here but I like the fact this other place has.
Great homemade French Fries and I like the milk shake this guy has over here and then when I go into this restaurant.
-- -- always knows my name why couldn't somebody take to bounce to the vast pull them all into one restaurant.
So when I started famous Dave's that was one of my goals are broke down 100 things that I could be the best of the best out and -- -- I think the proof is on the putting us they say.
There is no other restaurant in American history.
It's including those the big their restaurants that are here in New York City this celebrity chef owned restaurants in Las Vegas.
Nobody has won over 700.
